James Clark, founder of the Ely Gin Company, is hoping to open a shop dedicated to the ever-popular spirit in Buttermarket, where Fisher and Co Watchmakers and Jewellers used to be.

Mr Clark has submitted a licensing application to East Cambridgeshire District Council to supply alcohol from the premise.

Speaking to Ely News, he said: “We’re really excited. We’ve been trading on Ely’s markets for around three years and we weren’t particularly looking for a shop. “However, when the unit in Buttermarket went on the market we knew it would be perfect. If all goes according to plan, we hope to open the shop on the first weekend of May to tie in with the Ely Food and Drink Festival.”

Mr Clark, from Ely, founded his gin business in 2012, and following rapid growth, the company now trades nationwide and is looking at opportunities overseas.

His ‘Ely Dark Chocolate Gin’ has been selected for the Great British Gin Menu on board Britannia, the biggest superliner ever built for the British market, which is being officially launched in March.

The company has been chosen as P&O Cruises say it is “one of the finest artisan gins in the UK”.

The gin is one of just 20 being offered on board Britannia and will be used for signature cocktails, gin tasting session, or simply to enjoy with tonic, ice and a slice.
